All human classes save for Dracoknights, Thieves and Mercenaries are available from the get go. Later on there will be special items introduced which can help your character change classes. The item in question is a special scroll which endows the user with the knowledge of the class they seek to change to. Once you change, you lose out on what you had before and start from scratch with your new character, though there will be a special formula for figuring out what you start with after the chance since I won't put you back at absolute base levels since that'd be suicide.

Anyway, the Laguz units which are off limits for the RP are Dragons and Lions. Neither of those two Laguz types will be playable, but all others will be.
